Squeeze the juice from 1/2 medium lemon until you have 1 tablespoon. Add the lemon juice, 2 cups cold heavy cream, and 1 teaspoon vanilla extract to the food processor. Process until thick and the consistency of whipped cream, about 3 minutes. Transfer to a large bowl, cover with plastic wrap, and refrigerate until ready to use. Wash and dry the food processor.
